Oaty Ginger Crunch Bars


If you love ginger then you are going to absolutely love snacking on these ginger crunch bars. They really had me getting up every few minutes to grab for more. This recipe has a chewy and oaty base, topped with a sweet and spicy ginger icing – hands down the perfect treat.


INGREDIENTS:

Topping:
1 cup of coconut oil (you can use coconut butter too for a creamier texture)
1/2 cup of honey (maple/rice syrup works too)
2 big tablespoons of almond butter
2 teaspooons of ground ginger (you can always add more if you prefer a stronger taste)
1 teaspoon of vanilla essence

Base:
1 cup of medjool dates
2/3 cup of ground almonds
1/4 cup of desiccated coconut
2/3 cup of old fashioned rolled oats


INSTRUCTIONS

Put all of the base ingredients in a food processor and blitz for about a minute.

In a lined baking dish, pour in the base ingredients and press the mixture evenly into the bottom of the dish.

Using a low heat, melt all of the topping ingredients in a saucepan. 

Once combined, pour the topping mixture over the base and place in the freezer for an hour.

Cut up into squares and store in the fridge.
