When it comes to healthy crackers, store bought options may not always be the best. Most have got fillers and preservatives that I would rather go without. This recipe is incredibly easy, adaptable and full of toasty rich flavour. They are one of my favourite snacks, either just on its own or paired with toppings (avocado and figs for the win!).
What you'll need:
1/2 cup almond flour
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
3 tablespoons ground flaxseeds
1/4 cup hemp seeds
1/4 cup chia seeds
1/4 cup sesame seeds
2 tablespoons extra virgin olive oil
1 cup water
A good dash of salt and pepper
Your choice of seasoning (For this recipe, I used dried thyme and rosemary plus a sprinkle of garlic powder)
What to do:
1. Preheat oven to 180C and line a large baking tray with baking paper.
2. Place ground flaxseeds in a bowl, stir in 6 tablespoons of water and set aside for the mixture to thicken.
3. In a large bowl, mix the rest of the ingredients together plus your choice of seasonings. Stir well until combined. Depending on the texture, you may need an extra tablespoon of almond flour to absorb the extra moisture.
4. Put the mixture on the prepared baking tray and compress the mixture using a spatula, to make sure the mixture is even and as thin as possible.
5. Bake for about 20 minutes. Take it out of the oven and using a sharp knife, make shallow markings on the mixture so you can cut it into individual pieces later. Return to the oven for another 20 minutes. You can adjust the baking time depending on how browned/golden and crispy you prefer.
6. Allow the crackers to cool - they will crisp up as they cool.
Notes:
- You can add different herbs and spices to these crackers: italian herbs, paprika, "everything bagel seasoning", garlic powder, onion powder, basil, oregano. I usually just eyeball it, otherwise I'd suggest 1-2 tablespoons.
- You can also include 2-3 tablespoons of grated parmesan cheese or nutritional yeast if you are vegan.
- These crackers can be made sweet too by adding either honey, maple syrup or monkfruit sweetener.
