Granola is one of those things that always seems like a bit of a hassle to make but actually it’s super simple and really satisfying. Once you have whipped up a batch, you can have it for breakfast, snack or even dessert! I personally like to enjoy it straight out of the oven when it’s still a little warm (definitely one of the perks of making your own granola) but it's never a bad idea to have some stored away in an airtight container ready for the moment when your granola craving hits! In this recipe, I have served it with my homemade almond milk and sliced banana but it’s good with any other fruit, on top of yoghurt or smoothie bowl, over a bowl of ice cream or even as an alternative topping for a crumble. The options are endless.
INGREDIENTS
1 cup rolled oats (use gluten free if required)1/2 cup almonds
1/2 cup walnuts
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1 tbsp vanilla extract
3 tbsp maple syrup
3 tablespoon coconut oil, melted
1/3 cup crunchy peanut butter
2 tablespoon cacao powder
Pinch of salt
1/3 cup crunchy peanut butter

1 egg white
Optional:
1 teaspoon maca powder
1 teaspoon lion's mane powder
Sprinkle of chocolate chips/cacao nibs
To serve:
Milk of choice
Sliced banana
INSTRUCTIONS
[1] Begin by preheating the oven to 180ÂșC and lining a baking tray with parchment paper.
[2] In a food processor, add your almonds and blitz until they form chunks. Next add in walnuts and blitz again until a chunky mixture is formed.
[3] In a large bowl, combine the oats, crushed almonds and walnuts, pumpkin seeds, sunflower seeds, cacao powder and salt.
[4] In a separate bowl, combine the vanilla extract, coconut oil, maple syrup and peanut butter.
[5] Pour wet ingredients into dry, and combine until the dry ingredients are evenly coated with the wet mixture.
[6] Drizzle the egg white all over the mixture until evenly coated.
[7] Scatter the mix onto the baking tray and pop in the oven for 12-14 minutes or until golden brown. before tossing the granola and putting back in the oven for a further 10 minutes.
[8] Allow to cool for a few minutes before serving in bowls alongside your milk of choice and some sliced banana. Or leave to cool completely before transferring to a jar or any airtight container. Enjoy!
